Bikini Recipe

Yields 10 people

For the Citrus Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar

To make the Premix (yields 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, to garnish
Mandarin essential oil, for finishing

Directions

Making the Cordial: Place all the components inside a saucepan, heat until it reaches a light boil, agitating to dissolve. After that, remove from the burner and let it to cool fully. Decant into a sealable bottle, cap it keeping it in the fridge, it will last for up to a month.

To make Batch Mix: Combine the specified spirits and syrup in a large bottle, let it rest for an hour, then filter it preferably using a fine cloth, so it's completely strained.

To serve: Pour 85ml from the premix into your cocktail shaker containing ice, and agitate gently for one minute to chill. Strain to a chilled martini glass or equivalent, garnish with some cranberries and finish with a light spray with the mandarin essence over the top.
